Garlic Prawns
3# prawns
1 cup red onion, diced small
2/3 cup garlic cloves, minced with 2 tbsp salt
1/8 tsp red chili pepper flakes
½ jalapeño peppers, seeded, membrane removed
3 oz butter
½ cup olive oil
2 tbsp red wine vinegar
1. Saute diced red onion in butter in a large pan until soft.
2. Add oil, red pepper flakes, garlic and diced jalapeño and cook for 1 minute.
3. Add prawns (or half the prawns – do not crowd pan) and sauté until turning pink.
Add vinegar and continue to sauté until the prawns are cooked.
4. Chill prawns, platter and serve.
If there are more prawns to cook, quickly remove cooked prawns with tongs to a plate.
Add the rest of the prawns and sauté until cooked. Add more butter and oil if necessary.
